Renowned pastry chefs at the Giardinetto restaurant in Pettenasco carefully developed the recipe for this limited-edition panettone, crafted in 2023.
Ingredients That Make a Difference
The panettone features three main ingredients: Glep’s Red Vermouth Vandalo, Agrimontana candied pears, and 70% dark chocolate. The dough is made with selected flours, fresh eggs, butter, sugar, sourdough, candied orange and lemon peels, as well as raisins and candied fruit. It ferments for 48 hours, creating a soft, airy texture with a crisp glaze for a satisfying crunch.

On the nose, the panettone releases the distinct notes of Red Vermouth Vandalo. It reveals intriguing aromas of cinnamon, clove, cardamom, and ginger. You’ll also notice hints of vanilla, rhubarb, cocoa, and gentle wormwood. Moreover, on the palate, the sweetness of the pear and chocolate further enriches the distinctive character of this panettone, making it both original and enchanting
And what better pairing than with VERMOUTH ROSSO VANDALO? This bold and resolute vermouth results from extensive research and tasting. It is crafted with botanicals that are hand-harvested in the Maritime and Occitan Alps. These botanicals are infused in white wine and combined with a blend of spices. The label features a black lake panther, a dreamlike creature imagined by Luca Garofalo.
